I remember watching Popeye The Sailor Man reruns on television as a child. It made me believe that spinach was the most fascinating vegetable in the world. Bluto, Popeyes nemesis and arch rival for the heart of Olive Oyl, would come around making trouble in every single episode. Popeye would eat a can of spinach, grow large muscles, and save the day by beating up Bluto with his new found strength. This spinach recipe will not do that for you. No instant strength to beat up the guy trying to steal your lady. You might want to invest in weight training classes. But….it is delicious.

DAIRY SUBSTITUTES

As always, the recipe is dairy allergy and lactose intolerant friendly but you can always use real butter if you would like. The measurements are exactly the same.

Sauteed Spinach

Yield: 5 servings

2 tbsp butter alternative (Earth Balance) or olive oil

1 shallot, diced

5 cloves garlic, sliced

1lb spinach

1 to 2 tsp red pepper flakes or to taste

salt, to taste

In a large braising pan or dutch oven, heat the butter alternative or olive oil over medium heat. Add the shallot. Cook for about 3 minutes or until translucent. Add the garlic and cook for about 2 minutes.

Add the spinach, red pepper flakes, and the salt. Cover with a lid. Cook for about 3 minutes or until spinach begins to wilt down.

Uncover the pot and stir the spinach. Cook until the spinach is wilted but not overcooked. It should take about 2 to 3 minutes. Serve while hot.
